My flatmates and I made chilli con carne some days ago. I bought more beans than we needed, so there was one can left over. One of them really dislikes corn, so that was another unused can. Today I thought I’d make use of both cans, two potatoes, some garlic and some onion I had lying around as a desperate “it’s Sunday and I have nothing else in the pantry” measure.

The end result surprised me… I was expecting dubious food, but I think the dish turned out great. Looked good, tasted better ദ്ദി(≧ڡ≦*).

Recipe

The dish was totally improvised so take the recipe and the ingredients with a grain of salt. I did not measure the spices, so I’m just writing the amounts here from memory. Traybakes are very flexible so, if I wanted to recreate this dish, I would just take the general idea and go by feeling.

Ingredients

  • 2 medium potatoes.
  • 4 cloves of garlic.
  • 1/2 yellow onion.
  • 1 can of kidney beans (drained) (255g can).
  • 1/2 can of corn (drained) (500g can).
  • 1 tbsp of olive oil.
  • 2 tbsp of chilli powder.
  • 1 tbsp of cumin.
  • 1 tbsp of oregano.
  • 1/2 tbsp of smoked paprika (pimentón picante).
  • 1/4 tbsp of black pepper.
  • 1/4 tbsp of salt.

Procedure

  1. Preheat the oven to 200ºC in fan mode 1.
  2. Wash and cut the potatoes into slices (do not peel, skin yummy).
  3. Mince the garlic and onion (chunkier bits for more texture).
  4. Drain the beans and the corn.
  5. Mix the veggies with the oil and spices (I mixed directly in the tray).
  6. Spread the mixed veggies in an oven tray.
  7. Bake in the oven for ~40 minutes.
  8. My tray looked too dry halfway through baking so I put a bit of water (actually red wine :P).
  9. Tada! Done :D

Observations

The beans were too crispy and most were popped open. Perhaps adding them after half of the baking time would fix this.

Do not be afraid to put more garlic and onion. I was scared it would overpower the other flavours, but since most of the taste is based on the spice mix, it would not have been the case. Next time I’d use 5 or 6 big cloves of garlic and the full onion (it would also solve the half an onion in the fridge situation).

The level of spiciness was perfect but if making this to share, make sure it’s not too much for the audience. Thanks Ayman for your grandma’s homemade chilli powder and thanks Mom for packing me tons of pimentón ₍ᐢ..ᐢ₎♡.

Footnotes

  1. I think fan mode is important so the potatoes get crispy. But that’s just a theory… an oven theory (it’s like my fifth time using an oven) (ᵕ—ᴗ—). ↩
